FARM FRITES

PRODUCT

French fries of various sizes are pre-fried and then delivered as frozen or chilled products to supermarkets and wholesalers.

PROCESS

After frying, the fries come out of the oil bath sterile onto the conveyor belt. In a closed tunnel, air is added for cooling before the product is finally packaged under protective atmosphere or frozen in another tunnel. To prevent microorganisms from contaminating the fries during this process – which could trigger the infamous biological “restart” – the supply air is pre-disinfected using VIROBUSTER® Steritubes.

ECONOMY

The key advantages are obvious: extended shelf life and significant energy savings. Once the products are free of microorganisms, storage and transport at higher temperatures can also be considered.
